Its an Andean grain, which only grows at peruvian and bolivian highlands, at an altitude up to 4000 meters above sea level. It has a dark color and is a species of goosefoot, similar in character and uses to the closely related quinoa.
Description
Cañihua has calcium, proteins (almost 20% for every 100g.), thiamin, riboflavin, magnesium, phosphorus, vitamin E, sulphur amino acids, B-complex vitamins, omega 6 y 9, among others. It is easy to digest and suitable for celiacs, since it doesn’t contain gluten.
